Old Fashioned Homemade Pancakes

Whether you’re in the mood for breakfast for dinner tonight, have decided to make breakfast for the family over the weekend, or are treating someone special to breakfast in bed, one thing that’s sure to bring a smile, is the sight of a stack of  light-as-air, golden, delicious, pancakes.  If you’ve never tried to make homemade pancakes from scratch before, you’ll be delighted at how easy it, and amazed at how much better they taste than the kind you make from a box.  Literally, you just dump a few, simple, ingredients into a bowl, stir it together – just like you do with the stuff in the box – and it’s ready to go. You probably even have the ingredients  just lying around in the pantry.

 Old Fashioned Homemade Pancake Recipe (makes 5- 6 large pancakes)
 Dry Ingredients
  • 1 cup flour
  • 1 tablespoon sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
Wet Ingredients
  • 1 egg
  • ¾ cup milk {add a tad more if you prefer a thinner consistency}
  • 2 tablespoons cooking oil

Dump the dry ingredients in a bowl and wisk them together to combine, then pour your wet ingredients and and wisk the whole thing until it’s pretty smooth.  It should look about like this:

Spoon about 1/4 cup of  batter onto a hot pan or griddle (which has been oiled or sprayed with cooking spray), and allow the batter to cook until bubbles form over most of the surface (like the picture below), then flip it over to the other side to cook.

Cooking will go more quickly once the pancake is flipped – you really just want to cook it through.  Once that’s done, you can remove the pancake from the pan and transfer it to your plate (the one below is about the right color of golden brown I prefer).

Serve these pancakes with any syrup – or make your own, like this delicious Blueberry Syrup, which can be made ahead and used to top pancakes or waffles, as an ice cream topping, or even given out as gifts.   Enjoy!
