Nutter Butter Cream Cheese Truffles

Do you ever find yourself wanting a truly decadent treat to eat but HATE thinking of how one little treat like that could totally blow your diet and cause you to lose ground on all the hard fought progress you’ve made lately toward getting in better shape?

If the answer to that question was no, then please stop reading now – otherwise you might seriously want to try this super easy, delicate, and decadent No Bake Nutter Butter Cream Cheese Truffle recipe that I created for just such an occasion.  In minutes you can be savoring a couple of these little gems and all for about 130 skinny little calories..


No Bake Nutter Butter Cream Cheese Truffles

Ingredients:

8 oz Cream Cheese

8 oz Peanut Butter (or any type of nut butter – I used Cashew Butter)

Small bag of Pretzels (crushed)

Granulated sugar (to taste)

(Appx 65 calories each)


Here is the basic cast of characters:

Directions:

Process the pretzels and 1 tbsp of sugar in a food processor until it looks like course cornmeal.  (You can also do this by crushing the pretzels in a ziploc bag using a rolling pen if you don’t have access to a food processor.).  Remove 2 tbsp of the ground pretzel mixture (for making the truffles), and pour the rest into a bowl or plate (to roll the truffles in).

Mix thoroughly the two tbsp of pretzel dust, along with all the nut butter and cream.  It should look similar to the picture shown below.

Scoop teaspoons sized amounts of the nutter butter mixture, shape into balls, then drop into the bowl or plate containing the pretzel dust (as shown).

Roll each ball gently in the pretzel dust until thoroughly covered.  Chill in the refrigerator for 30 minutes, or if you can wait, feel free to eat right away.  Enjoy!
